Prep: <10 minutes   Cooking time: 15 minutes Serves: 1-2

What you will need

  • 750 gm spinach blanched
  • 1/2″ fresh ginger
  • 1 green chilli
  • 1 tbs oil and a large knob of butter.
  • 1 tbs of flour
  • 1 and 1/2 cups whole milk.
  • 1/4 tsp whole cumin seeds
  • 1/4 tsp garam masala powder

Now Get Cooking

  1. Blend the spinach, ginger and chilli in a food processor till smooth.
  2. Heat butter and oil together and add cumin seeds.
  3. Add flour and stir to make a roux.
  4. Add milk slowly. Make a creamy white sauce.
  5. Add the garam masala.
  6. Add the spinach mix. Stir well.
  7. Simmer 5 mins.
  8. Add salt to taste.
