Romazava is a traditional Malagasy stew from Madagascar, characterised by its rich and savoury flavours. It is typically made with a combination of meat (often beef, chicken, or pork), greens, and spices. The dish is known for its simplicity yet deeply satisfying taste, often enjoyed with rice. This recipe will guide you through creating an authentic Romazava at home.
Ingredients:
- 1 pound (450 grams) of beef (or a mix of beef, chicken, and pork) cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch (2.5 cm) piece of ginger, minced
- 3 medium tomatoes, chopped
- 4 cups (1 litre) beef or chicken broth
- 1 bunch of leafy greens (such as spinach, mustard greens, or cassava leaves), roughly chopped
- 2 cups (200 grams) watercress
- 2 cups (200 grams) sorrel (if available)
- 2-3 green chillies, sliced (optional)
- Salt and pepper to taste
Preparation:
Prepare the Ingredients:
- Cut the meat into bite-sized pieces.
- Finely chop the onion, mince the garlic and ginger, and chop the tomatoes.
- Roughly chop the leafy greens and rinse the watercress and sorrel.
Cook the Meat:
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the meat and brown it on all sides. This should take about 5-7 minutes.
- Once the meat is browned, remove it from the pot and set it aside.
Sauté the Aromatics:
- In the same pot, add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and ginger, and sauté for another 2 minutes until fragrant.
Add Tomatoes and Broth:
- Add the chopped tomatoes to the pot and cook until they break down and release their juices, about 5 minutes.
- Pour in the beef or chicken broth and stir well to combine.
Simmer the Stew:
- Return the browned meat to the pot.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 45 minutes or until the meat is tender.
Add the Greens:
- Once the meat is tender, add the chopped leafy greens, watercress, and sorrel (if using) to the pot.
- Add the sliced green chillies if you like some heat.
- Stir well to combine and let the stew simmer for another 10-15 minutes or until the greens are tender.
Season and Serve:
- Taste the stew and season with salt and pepper to your liking.
- Serve the Romazava hot, accompanied by steamed rice.
