A Culinary Staple of the Creole Renaissance Festival
Kreol Magazine had the pleasure of speaking with Bryant Fuselier, better known as “Booby” or “Sause Boss,” a beloved food vendor at the Creole Renaissance Festival. From its inception, Booby has been an integral part of this vibrant event, providing attendees with authentic Creole cuisine that perfectly complements the festival’s celebration of music and culture.
Keith Frank, the visionary behind the Creole Renaissance Festival, launched this event to preserve and celebrate Creole culture. Frustrated by the commercialization and dilution of traditional Zydeco music at other festivals, Frank envisioned an event that stayed true to its roots. The festival, held annually, has grown to attract thousands of attendees who come to enjoy authentic Creole music and cuisine.
Booby’s Journey with the Festival
Booby recalls how Keith Frank approached him with a clear vision to offer foods that truly represented Creole culture. “Keith didn’t want to hear anything about hot dogs and hamburgers,” Booby says. “He wanted the food to reflect the Creole experience, the music, and the people.”
Culinary Delights at the Creole Renaissance Festival
Booby’s culinary offerings have become a festival highlight, selling out year after year. His menu features red beans and rice, pork and sausage jambalaya, and the ever-popular chicken and sausage gumbo. “The gumbo is always a hit,” Booby notes. “We serve it at 6 PM to ensure it is fresh and usually gone by nine.”
Booby’s commitment to authenticity and quality has earned him a loyal following. Festivalgoers eagerly await his dishes, appreciating the genuine taste of Creole cuisine. “People come here for the love of the culture,” he explains. “They want to experience everything that has to do with Creole culture, including the food.”
