This baked meat pie consists of spiced, curried minced meat topped with a creamy egg custard, and it is often served with yellow rice, banana slices, and chutney. Ingredients:
- Minced meat (lamb or beef): 500g (about 1.1 lb)
- Onion: 1 large, finely chopped
- Garlic: 2 cloves, minced
- Bread: 2 slices, crusts removed
- Milk: 300ml (about 1 1/4 cups)
- Eggs: 2
- Curry powder: 2 tablespoons
- Turmeric powder: 1 teaspoon
- Sultanas (golden raisins): 100g (about 2/3 cup)
- Blanched almonds: 50g (about 1/3 cup), chopped
- Lemon zest: of 1 lemon
- Bay leaves: 2-3
- Salt and pepper: to taste
- Oil: for frying
Preparation:
- Prepare Bread Mixture: Soak the bread slices in half of the milk, set aside.
- Sauté Meat Mixture: Heat the oil in a pan and sauté the onions until translucent. Add garlic and continue to fry for a minute. Add the minced meat and brown it, breaking up any lumps. Stir in the curry powder, turmeric, sultanas, almonds, lemon zest, salt, and pepper. Cook for a few minutes until all ingredients are well combined.
- Squeeze out the milk from the soaked bread and add the bread to the meat mixture, mixing well.
- Assemble and Bake: Transfer the meat mixture to a greased baking dish and flatten it with the back of a spoon. Beat the eggs with the remaining milk and pour this mixture over the meat. lace bay leaves on top.Bake in a preheated oven at 180°C (350°F) for about 35-40 minutes or until the egg mixture has set and the top is golden brown.
