Ingredients:

Salad:

  • Spinach: 500g (about 1 lb) fresh baby spinach, washed and dried
  • 4 large boiled eggs, peeled and sliced or quartered
  • 2 tomatoes, diced (approximately 300g or 1.5 cups)
  • 1 red onion, thinly sliced (about 100g or 1/2 cup)
  • 50g (about 1/4 cup) lean bacon bits (cooked and crumbled)

Creole Vinaigrette:

  • Mustard: 2 tablespoons (Dijon or whole grain mustard works best)
  • Apple cider vinegar: 60ml (about 1/4 cup)
  • Olive oil: 120ml (about 1/2 cup)
  • Creole seasoning: 1 teaspoon (adjust to taste)
  • Salt and pepper, to taste

Preparation:

  1. Prepare the Vinaigrette: In a small bowl, whisk together the mustard, apple cider vinegar, and Creole seasoning. Slowly drizzle in the olive oil while continuously whisking to form an emulsion. Season with salt and pepper to taste. Set the vinaigrette aside.
  2. Assemble the Salad: In a large salad bowl, add the fresh spinach.Top the spinach with the sliced boiled eggs, diced tomatoes, and thinly sliced red onions. Sprinkle the bacon bits over the salad.
  3. Dress and Serve: Just before serving, drizzle the Creole vinaigrette over the salad.Toss gently to ensure all the ingredients are well-coated with the dressing. Serve immediately. Tip: You can customize this salad by adding other ingredients like sliced bell peppers, cucumbers, or avocado. For a vegetarian version, omit the bacon bits or replace them with toasted nuts for added crunch.
