  • Onion: 1 large, finely chopped (about 150g or 1 cup)
  • Garlic: 3 cloves, minced
  • Tomatoes: 4 large, diced (about 600g or 1.3 lbs)
  • Fresh thyme: 2 sprigs (or 1 teaspoon dried thyme)
  • Bay leaf: 1
  • Creole seasoning: 1 to 1.5 teaspoons (adjust to taste)
  • Alternative: [1/2 teaspoon paprika, 1/4 teaspoon dried oregano, 1/4 teaspoon dried basil, 1/4 teaspoon black pepper, 1/8 teaspoon cayenne (or to taste for heat), 1/8 teaspoon garlic powder, 1/8 teaspoon onion powder]
  • Olive oil: 3 tablespoons
  • Salt and pepper, to taste

Preparation:

  1. Sauté Vegetables: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
